Eating Healthy day #1!

I have a new goal of trying to eat healthier. This is the next step in my process of taking better care of myself. I have gotten all my medical issues under control, I am in the process of dental work, and now I will be changing my diet. In addition to this I am also going to be getting my hair and nails done on a regular basis. It makes me feel better so I want to BE better. No more putting myself on the back burner!!!

Before we went grocery shopping this week, I went to eatingwell.com and picked out some recipes that sounded good. A few people have asked for the recipe for the dinner I made tonight, so here ya go! It isn't the exact recipe you'll find on the website, because I omitted some things and changed the cooking method around a little.

Paprika Shrimp and Green Bean Saute

2 cans cut green beans, drained
3 tablespoons extra-virgin olive oil
1/4 cup minced garlic
2 teaspoons paprika
1 pound raw shrimp, peeled and deveined
1 16-ounce can baby butter beans
1/2 teaspoon salt
1/2 cup chopped fresh parsley, divided
Freshly ground pepper, to taste

Heat oil in a large skillet over medium-high heat. Add garlic and paprika and cook, stirring constantly, until just fragrant but not browned, about 20 seconds. Add shrimp and cook until pink and opaque, about 2 minutes per side. Stir in butter beans and salt; cook, stirring occasionally, until heated through, about 2 minutes. Stir in 1/4 cup parsley. Stir in green beans and cook until heated through. Sprinkle with pepper.

I served it over brown rice and it was delish! Very easy to make, too!
